I’m still using up my gigantic pile of freshly cooked beetroot. This beetroot and veggie juice is just like a multi-vitamin tablet, but tastes better and is a good source of nitrate.

Ingredients

• 3 small cooked fresh baby beetroots (see the beetroot and walnut salad for cooking directions)
• 1 carrot
• 3 celery sticks
• Juice of one orange
• 1 green apple
• 1 cup cold water
• 1 scoop protein powder (though it does takes slightly nicer without it)

I prefer to blend this to retain the fibre, but you can also use a juicer. Serve with ice, it’s far nicer cold than at room temperature.
